Know your Pink Oyster kit
5-7 days. Start this one straight away, Pink Oysters move fast.
18-28°C. A warm-weather variety through and through.
Your first flush yields enough for a meal for 1-2 people. Expect 2, sometimes 3 flushes in total, each noticeably smaller than the one before it.
Doesn't hold well once you're ready to start. Need to wait? Princess of Pearl or Lion's Mane can rest in the fridge for a week or more.
Give it indirect sunlight and the colour will run deeper, from soft pink through to a rich pinkish-red.

Prepare your kit
Open the box and remove the grow bag. Cut open the window on the front of the box, then cut along the X on the back of the bag. Handle it gently as you place it back, lining the cut up behind the window. Keep it somewhere clean, with indirect light, at room temperature.

Hydrate, care and watch them grow
Spray the substrate lightly until damp, not soaking. Close the X loosely to hold humidity in, and mist 2-3 times a day. Once mushrooms have pinned, mist around them, never directly onto them, they don't like it and it can damage the caps.

Harvest
Pick just before the caps fully flatten, while the edges are still curled under, usually 4-8 days after pinning. Twist and pull the whole cluster at the base, or cut with a knife.

Reset for the next flush
Remove any leftover stems and tape the original X closed. Cut a new X on another side of the bag, place it back with the new opening behind the window, and keep misting as before.

Built for the plate, not just the eye
Pink oysters are as good on the plate as they are striking in the kit. That vivid pink fades once heat hits the pan, so don't expect the colour to survive cooking, what you're left with is a succulent, savoury mushroom with a denser texture. They hold up beautifully sautéed, or folded into pasta and pizza, and make a genuine meat substitute in everything from burritos to bbq sandwiches, and even vegan bacon.
