Hello, I’m Martin, founder and grower behind Fleur de Fungi.

My journey into mushroom cultivation began with curiosity. The first time I discovered how mushrooms grow, I was fascinated by their diversity and the complexity of the growing process.

At the time, I was working full time as a production manager at a biotechnology algae company. Outside of work, my garage slowly turned into a small mushroom lab. Evenings and weekends were spent experimenting and learning how to grow gourmet mushrooms.

What started as curiosity gradually turned into a real commitment to learning how to grow mushrooms well.

From Garage Experiment to Mushroom Farm

The first mushrooms I grew started in a small garage setup, with simple equipment and a lot of trial and error.

What began as a personal experiment slowly evolved into something much bigger. As the process improved and harvests became more consistent, the idea of building a dedicated mushroom farm became a reality.

Today, Fleur de Fungi is an indoor gourmet mushroom farm in Coolum Beach on the Sunshine Coast, producing fresh spray free mushrooms in carefully controlled conditions. 

Every harvest reflects that journey, from a garage experiment to growing fresh mushrooms for the local community.

Why Fleur de Fungi Exists

Fleur de Fungi was created to grow fresh, high quality gourmet mushrooms for the local community.

Mushrooms are a remarkable food source.  They are naturally nutritious, incredibly versatile in the kitchen, and efficient to grow with minimal environmental impact. Yet truly fresh gourmet mushrooms are still difficult to find outside major cities.

By growing mushrooms locally on the Sunshine Coast, Fleur de Fungi aims to bring chefs, home cooks, and food lovers closer to fresh ingredients grown with care.

The goal is simple. Produce mushrooms that are clean, nutritious, and full of flavour, while building a small farm rooted in quality, transparency, and respect for the natural growing process.

Fresh Fleur de Fungi mushrooms can be collected from our farm in Coolum Beach, at the Noosa Farmers Market, or ordered online when harvests are available.

Are all your mushrooms grown locally?

Yes. All Fleur de Fungi mushrooms are grown indoors at our farm in Coolum Beach on the Sunshine Coast. Growing locally allows us to harvest mushrooms at their peak freshness and supply them directly to our community.
This short farm-to-table journey means our mushrooms go from harvest to kitchen quickly, ensuring excellent flavour, freshness, and quality.

Do mushrooms need to be cooked?

Mushrooms can be eaten raw, but cooking them is usually recommended. Mushrooms contain chitin in their cell walls, a natural fibre that can be difficult for our bodies to break down.
Light cooking helps soften these cell walls, making mushrooms easier to digest while allowing more of their nutrients and flavour to be released. For this reason, most gourmet mushrooms are best enjoyed sautéed, roasted, or grilled.
